Egg Replacers can work well in recipes calling for less than 3 eggs. Commercial products include: Ener-G Egg Replacer or Orgran No-Egg. We have contacted both companies and have been reassured there are no peanuts or tree nuts currently present in the facilities producing these products.
To make your own egg replacers, try:
¾ teaspoon tapioca flour
¾ teaspoon potato starch
pinch baking soda
Mix the tapioca flour, potato starch and baking soda. Use 1 ½ teaspoon of this mixture in 2 tablespoons of cold water to replace one egg. Consider adding oil to replace fat.
Three Additional Egg Replacers (all replace one egg):
1 teaspoon yeast dissolved in ¼ cup warm water
1 ½ Tbsp water + 1 ½ Tbsp oil, + 1 tsp. Baking powder
1 packet gelatin + 2 Tbsp warm water (don’t mix until ready to use)
Replacing eggs is an experiment in progress! What works in one recipe may not work in another.
